Japanese Sharpening Bench Stones:
The higher the number, the finer the grit. Our 6,000 and 10,000 stones are the finest, and used to polish a mirror finish to the edge of knives, making them super-sharp! The lower the number the courser the grit. The standard type grits are from 250, 800, to 1000. A great general sharpener would be the 800 or 250-1000 bench stones.
Single Grits Available: 800 (210x69x38mm), 1200 (200x63x30), 4000 (190x63x19mm), 6000 (190x63x19mm) and 10,000 (200x75x25mm), the 10,000 comes with a Nagura stone for creating a polishing slurry on the stone.
Double Sided Grits available: 250-1000 and 1000-6000, both (200mm x 50mm) in size.
